Tandoori chicken

Tandoor is an oven which is cylindrical in shape and made of clay.Meat or bread is cooked on high heat from wood or charcoal.Now a days you can find some tandoors that are heated with electricity or gas. This is how the tandoori oven looks from outside.

If you don't have a tandoori oven at home you can prepare it in a grill or oven.

Tandoori chicken is and Indian dish from the state of Punjab.Chicken is marinated in yoghurt and spice mix called tandoori masala for at least an hour and barbecued in the tandoori oven. It is served with onion rings and lemon wedges. Red chili powder gives it the red color. Some add red color to it but i do not advice that on the question on the safety of food coloring. Red #40 is a food color which is petroleum based and may cause cancer.

Tandoori masala is a mixture of Garam Masala and garlic powder, ginger powder,cumin, red chili and lemon juice.Tandoori Masala is also used in chicken tikka, butter chicken, tandoori fish and paneer tikka. Homemade tandoori masala can be stored in airtight jars for up to 2 months.
